tavern vinegar companyIf you’re a chef or mixologist seeking culinary inspiration, or just someone interested in the many potential creative uses of craft beer and fine wine, you’ll want to check out the offerings from the new Tavern Vinegar Company.

Chef Jonathon Sawyer, the mastermind behind renowned Cleveland restaurants The Greenhouse Tavern, Noodlecat, Sawyer’s Street Frites and Seesaw Pretzel Shoppe, launched Tavern Vinegar with a unique lineup of barrel-aged wine and beer vinegars.

The available offerings include Dopple Bock, Stout, Ohio Witte, Riesling, Chardonnay, Rosè and Red Wine vinegars. All of the vinegars are aged in oak bourbon barrels from, and at, Columbus distillery Middle West Spirits.

At a recent launch party for the company I got to try several delicious dishes and cocktails created using the various vinegars, including one drink blending the Riesling vinegar with OYO Honey Vanilla Bean Vodka and St. Germain, and another using the Stout vinegar with OYO Bourbon and walnut bitters.

All of the vinegars carry unique flavor profiles and are sure to inspire creative cooks and cocktail crafters to come up with some interesting dishes and drinks.
