Random Precision to specialize in sours

sour barrelJason Grable hopes to fill a niche in the Columbus craft beer market when he opens his sour-specific brewery Random Precision this spring.

Grable, who has been homebrewing for about 12 years, discovered sours about four years ago during a visit to Cascade Brewing in Portland.

“I had no idea beer could taste that way,” said Grable “I had my own little bubble of Great Lakes Christmas Ale and IPAs and stouts, but that [sour] was just so different. We came back here and you couldn’t really find [sours].”

The 10-barrel brewery, which hopes to open in April in the Linworth neighborhood of Northwest Columbus, will launch with a Brett IPA and a Berliner Weiss, which only take a few weeks to brew. The rest of their sours will need to barrel-age for several months.

“I think there’s something to be said about having a beer that’s just 4% and a little bit tart with some sweetness on the backend,” said Grable. “I think Mike Byrne’s Berliner’s (Lineage Brewing) are just absolutely amazing, so I think that’s kinda what we wanted to do.”

The name Random Precision, a borrowed lyrics from the Pink Floyd song Shine On You Crazy Diamond (“You wore out your welcome with random precision”), also pretty accurately describes the process of making sours.

“I was reading this online article about sour beers where [the brewer] did everything that he thought he was going to do and when we was done the beer was nothing close to what he thought it was going to be, but it was better,” said Grable. “He tried to plan everything that he could but you really don’t have that much control sometimes with sours. I was listening to “Shine On” the next day and I thought, ‘That actually kinda works.'”

The taproom will take up about 1,000 square feet of the 5,500 square foot building, with a garage door that will open up for fresh air in warmer weather. In addition to their own lineup of sours, Random Precision will offer local guest drafts on their 10-12 tap handles as well as wine.

Random Precision Brewing will be located at 2365 West Dublin Granville Road.
