Hoof Hearted Brew Pub opens this week

Hoof HeartedHoof Hearted, the Marengo-based brewery that’s built a massive cult following from their popular can releases, is opening a brewpub in Italian Village this week.

The new Hoof Hearted Brew Pub and Kitchen, which opens this Thursday, is a partnership with A&R Creative Group (The Crest, Ethyl & Tank), a relationship which Hoof Hearted owner Trevor Williams describes “related to, but not directly affiliated with” A&R.

“We participated in many food tastings as the chefs were dialing in the menu, ae gave them our feedback throughout the process,” said Williams. “Design-wise we were on board with the nordic style that the brewpub has under the design of Tim Lai. We traveled to Copenhagen last summer to really hone in on certain design aspects that we found inspirational.”

The bar is opening with an impressive lineup of Hoof Hearted brews:

  • Musk of the Minotaur IPA
  • Tub Life fARMHOUSE Pale Ale
  • Belloq Dark English Mild with Ethiopian Harrar Coffee
  • Voltan Russian Imperial Stout
  • Plutonium Nyborg
  • Cascadian fARMHOUSE Ale
  • Everybody Wants Some Centennial DIPA
  • Are We Having Fun Yet? Party Pale
  • Roller Blabe DIPA
  • We’ll Do It Live! Belgian Tripel/IPA

They also have Wet When Slippery Frooted DIPA with Passionfruit, and Rosé Gosé, a hot pink Hibiscus Gose, in the queue to tap soon after opening.

On the kitchen side of the operation, Williams says he’s most excited for the oxtail toast and lengua tacos. He’s also pumped about the new merchandise debuting with the brewpub.

“We went bonkers in the merch department for the brewpub,” said Williams. “Tons of new t-shirt designs, sweatshirts, hoodies, windbreakers, three varieties of fanny packs, hats, headbands, stickers, pins.”

Hoof Hearted will also be launching a coffee brand, Hoof Hearted Coffee, in the next two months, which will be roasted at their Marengo facility. The brewery intends to continue to host their popular can releases in Marengo as well.

Hoof Hearted Brew Pub and Kitchen will open at 4pm this Thursday, February 11. Hoof Hearted Brew Pub and Kitchen is located at 850 N. Fourth St.
