Echo Spirits Distilling Co will debut a pineapple rum this week with a portion of proceeds benefitting the local hospitality industry.
Joe Bidinger, Echo’s founder and distiller, sought to create a cocktail spirit that was less sugary-sweet than other flavored rums, achieved by using leftover pineapple skins from Simple Times Mixer’s juicing operation. $1 from every bottle sold will go to a rotating cause that supports the service industry — first up is Service!, a relief effort launched early in the pandemic that provides meals and grants to affected hospitality workers in Franklin County.
“Pineapple is the symbol for hospitality and service, so we wanted to make this benefit the service industry that has been ruined over the past year,” said Bidinger.
Echo Spirits will celebrate the debut of their Pineapple Rum with a launch party on April 15 from 4-11pm including special cocktails, live music from Evan Holcombe, and food from the Demo’s Grille truck.
The rum is expected to hit select state liquor stores the following week, including Arena Wine and Spirits, Chateau Wine & Spirits, Giant Eagle Grandview and Weiland’s Market.
