Four Thieves Thirst Parlour impressed cocktail aficianiados last year at their first two pop-up (legal) speakeasies, which took place at The Kitchen and Land-Grant Brewing Company. Their next event has been announced for March 28 at The Commissary.
Four Thieves is a collaboration between bartender Annie Williams (The Sycamore) and promotions partner Luke Pierce (Land-Grant). The pop-up events give the duo an opportunity to utilize ingredients and innovative bartending techniques not practical for everyday bartending.
The March event will also add brunch food from chef Catie Randazzo (Challah Food Truck) into the mix.
“For some of the courses the cocktail inspiration came from the food and for some the food was inspired by the cocktail,” said Williams. “It’s a totally different process bouncing off another creative individual.”
Among the featured brunch cocktails for the event will be at least one bubbly-based drink, a lighter variation of a Bloody Mary, and a coffee-rum-banana drink for dessert.
“We wanted to reinvent brunch cocktails, and do something aside from the tired bloody mary and mimosa that everyone knows — and loves,” said Pierce.
The brunch menu is so far slated to include a dish with charred asparagus, creme fresh, fried capers, botargo and balsamic; and a dessert comprising spicy chicken and burnt waffle ice cream, drizzled with serrano honey. Both food and drink menus are still being finalized.
Two seatings will be held for the March 28 event, at 11am and 2pm. Tickets are $65 and are available online.
